<p>DIRECTIONS<br />
Heat 2 tbsp oil in a frying pan. Add 1/4 tsp crushed cumin, 1/2 tsp mustard seeds and fry till they begin to sizzle. Add 200gm fish ,1 tsp salt, 1/2 tsp red chili powder, 1/4 tsp turmeric and 2 tbsp lemon juice. Mix well. Then add 300gm boiled potatoes, 2-3 sliced green chilies, 2 tbsp garlic chives and 1tbsp coriander leaves. Mix well and shape the mixture into medium sized patties. Dust them with white flour and coat each one with bread crumbs.<br />
Deep fry for 3-4 minutes on each side until they turn crisp and brown.</p>

<p>~ Cut into onion 12 &#8211; 16 vertical wedges, but do not cut through bottom [root end]. Remove about 1&#8243; of &#8220;petals&#8221; from center of onion. ~ Dip cut onion in seasoned flour and remove excess by shaking; dip in batter and remove excess by gently shaking.</p>
<p>~ Separate petals to coat thoroughly with batter; mix batter after standing to blend ingredients.</p>
<p>~ Gently place onion in fryer basket and deep fry at 375 &#8211; 400o for 1 1/2 minutes; turn over and fry a 1 &#8211; 1` 1/2 minutes longer or until golden brown.</p>
<p>~ Drain on paper towels. Place onion upright in shallow bowl and remove center core with circular cutter or apple corer; serve hot with sauce. **Seasoned flour: combine 2 cups flour, 4 tsps paprike, 2 tsps garlic power, 1/2 tsp pepper, and 1/4 tsp caynne pepper; mix well.</p>
<p>**Creamy chili sauce: combine 1 pint each mayonnaise and sour cream, 1/2 cup chili sauce and 1/2 tsp cayenne pepper. Optionally add 1/4 C horseradish.</p>

<p> 4.  Working quickly place each ring in hot oil.  Fry rings a few at a time about 2 to 3 minutes or until golden brown stirring once with fork to separate onion rings.  Remove from oil with fork, drain on paper towel.  Repeat with remaining batter and onions.  Keep cooked onion rings warm on paper towel lined baking sheet in a 250 degree oven.  Sprinkle with salt before serving.</p>

<p>1/2 c. grated Cheddar cheese, RESERVE</p>

 In large bowl, mix all ingredients (except cheese) and put in a double foil packet, sealing edges tightly.  Grill over hot coals for 10 to 15 minutes.  Turn packet over and punch holes in foil to vent steam.  Grill 10 to 15 minutes more.  Open packet carefully because of steam, place French fried in a warmed serving dish and toss with 1/2 cup of grated cheddar cheese.</p>
