An Indian recipe for butter chicken where you can marinate the chicken from 2 hours to overnight. This is a butter chicken that is made without butter in it.

Ingredients
  • For marinate:
  • 1kg chicken breast, cubed
  • 1 tbs garlic paste
  • 1 tbs ginger paste
  • 1/2 cup Greek yogurt
  • 1 tsp chilli powder
  • 1/2 tsp garam masala powder
  • 1 tsp salt
  • 4 tsp extra virgin olive oil
  • 1 tbs lemon juice
  • For curry:
  • 1 cup tomato puree
  • 1 tsp honey
  • 1/2 cup thick cream
  • 1 tsp chilli powder
  • 1.5 tbs ginger paste
  • 1.5 tbs garlic paste
  • 1 tsp garam masala
  • 4 bay leafs
  • 5 tbs extra virgin olive oil
  • 4 green cardamoms
  • 2 black cardamoms
  • 5 cloves
  • 1 piece cinnamon stick
Directions
  • Step 1 For Marinate: Mix chilli powder, lemon juice, ginger and garlic paste, garam masala, oil and yogurt in a medium sized bowl.
  • Step 2 Add chicken to the marinate, cover and refrigerate for 2 hours to overnight.
  • Step 3 For curry: Roast the chicken pieces on a baking tray in a pre-heated oven at 200C for 7 minutes.
  • Step 4 Heat oil in a large frypan over medium heat. Add bay leaf, black and green cardamom, cloves and cinnamon stick and let crackle. Add ginger and garlic paste and cook on a low heat for 7 minutes.
  • Step 5 Add chicken pieces and cook for 7 minutes. Add tomato puree, chilli powder, garam masala and salt. Cook for a further 8 minutes. Add honey and cream.
  • Step 6 Cook 2 cups of basmati rice as per packet instructions. Serve chicken with rice.
