Description

A recipe for almond fig cake.


Ingredients

Scale
  • 180g unsalted butter
  • 150g sugar
  • 3 eggs
  • 45ml milk
  • 120g almond meal
  • 120g flour
  • 1½ tsp baking powder
  • 7 figs

Instructions

  1. Preheat an oven to 180°C. Meanwhile, line a baking dish with about 5 grams of butter, then microwave the rest of the butter in a large bowl on high setting for 40 seconds to melt it. Add sugar to the bowl and mix until well combined.
  2. Crack and add eggs to the butter and sugar mixture and whisk. Add the milk and almond meal, whisking until well combined.
  3. Sift flour and baking powder into the mixture and stir until well combined, then pour the mixture into a baking dish.
  4. To prepare the figs, cut the stem off and then cut each fig into 6 equal slices, then arrange them on top of the cake.
  5. Bake the cake for 40 minutes and then let sit for 10 minutes, then serve, or refrigerate and serve later.
