Description
A recipe for almond fig cake.

- 180g unsalted butter
- 150g sugar
- 3 eggs
- 45ml milk
- 120g almond meal
- 120g flour
- 1½ tsp baking powder
- 7 figs
Instructions
- Preheat an oven to 180°C. Meanwhile, line a baking dish with about 5 grams of butter, then microwave the rest of the butter in a large bowl on high setting for 40 seconds to melt it. Add sugar to the bowl and mix until well combined.
- Crack and add eggs to the butter and sugar mixture and whisk. Add the milk and almond meal, whisking until well combined.
- Sift flour and baking powder into the mixture and stir until well combined, then pour the mixture into a baking dish.
- To prepare the figs, cut the stem off and then cut each fig into 6 equal slices, then arrange them on top of the cake.
- Bake the cake for 40 minutes and then let sit for 10 minutes, then serve, or refrigerate and serve later.
